Hopefully, we can all gather some awesome new ideas for our recipe books! I’m sharing one today that’s grain-free. So sorry I didn’t get one up on Thursday; it’s been a bit of a crazy week! Here it is:
Simple Ground Beef Vegetable Soup
- 1.5 lbs. ground beef
- 1 small onion, chopped
- 6 c. beef stock
- 1 c. peas
- 5 – 6 medium carrots, peeled and sliced
- 3 medium potatoes, chopped
- 1/2 c. spinach
- 1 c. tomato puree
- 1/2 tsp. marjoram
- 1/2 tsp. oregano
- Sea salt to taste
In a large soup pot, brown the ground beef with the onion. Add the stock, tomato puree, veggies, and spices. Cook for 1 hour or so, until the veggies are soft. Taste and add salt as needed. Serves 4 – 6.
It could not be simpler! I whipped it up last night for dinner quickly and everyone ate, and enjoyed it.
