Grocery Money-Saving Challenge: Checking In and Frugal Recipe Link-Up

We’re now about halfway through the Grocery Money-Saving Challenge.  How are you doing with it?  Have you been able to stick to the budget?  What has been the hardest part for you so far?

Today, I want to share a link-up of frugal recipe ideas.  If you have a blog, please feel free to leave a link to one of your awesome, frugal ideas!  If you don’t have a blog, feel free to share your recipe in the comments section.

Hopefully, we can all gather some awesome new ideas for our recipe books!  I’m sharing one today that’s grain-free.  So sorry I didn’t get one up on Thursday; it’s been a bit of a crazy week!  Here it is:

Simple Ground Beef Vegetable Soup

Ingredients:

  • 1.5 lbs. ground beef
  • 1 small onion, chopped
  • 6 c. beef stock
  • 1 c. peas
  • 5 – 6 medium carrots, peeled and sliced
  • 3 medium potatoes, chopped
  • 1/2 c. spinach
  • 1 c. tomato puree
  • 1/2 tsp. marjoram
  • 1/2 tsp. oregano
  • Sea salt to taste

Directions:

In a large soup pot, brown the ground beef with the onion.  Add the stock, tomato puree, veggies, and spices.  Cook for 1 hour or so, until the veggies are soft.  Taste and add salt as needed.  Serves 4 – 6.

It could not be simpler!  I whipped it up last night for dinner quickly and everyone ate, and enjoyed it. :)

    Ohh – I need to check out this challenge…I've been going over-budget with my real-food groceries lately.

    I have really enjoyed this thought process and am curious if you will be posting more of your meal plans soon. I have passed along your site to severl friends to watch how you eat real food on a food stamp budget. (Also thanks for the link to the other blogger who did this.) Your post on the price comparison of a week on real food and the week on a SAD diet is very well done. I have taken great caution to see that our food doesn't get out of hand just because I have chosen to feed our family real food.
