Recipe Collection: Baked Lemon-Pepper Fish

This is one of my favorite fast meals.  I can get it together in just 10 – 15 minutes, depending on what I’m serving as the side dish, and it’s delicious.  Plus, I nearly always have the ingredients on hand!

Ingredients:

  • 2 – 3 fish filets (I like sole)
  • Juice of 1 lemon
  • Fresh cracked black pepper
  • Sea salt to taste

Directions:

Place thawed fish on a baking pan.  Cover with lemon juice, pepper, and salt.  Bake at 325 for 10 – 15 minutes, until fish flakes easily with a fork.  Serve with additional lemon wedges.

This goes nicely with rice, steamed broccoli, or a salad.  I like salad because of the nice, fattening dressing. :)   (The fish is so low fat that I worry about satiety without.)
