Recipe Collection: Grain-Free Chocolate Muffins

These are grain-free, but not GAPS-friendly (sorry).  They are delicious though…I think.  My family ate them too fast for me to really try them!  They assure me that they are delicious though!

Ingredients:

  • 2 c. almond flour
  • 1/2 c. raw cacao powder
  • 1/2 c. sucanat
  • 1 tsp. sea salt
  • 3/4 tsp. baking soda
  • 1/3 c. butter, melted
  • 3/4 c. milk
  • 2 eggs

Directions:

Mix all the dry ingredients in a large glass bowl.  Add the wet ingredients and stir until combined.  Pour batter into a prepared muffin pan (greased or lined with paper).  Bake at 350 for 20 – 25 minutes.  Makes 10 – 12 muffins.

    This was my FIRST almond flour recipe after going grain free a few days ago. It was WONDERFUL! I sweetened with stevia and coconut sugar. I had to come back and thank you! If my first one hadn’t turned out, I might not have wanted to try it again. I thought it would be yucky to use almond flour – I don’t even like almonds really! But wow now I am so excited. I can stick with this grain free if I have something sweet that makes me happy!

    Could probably make this GAPS friendly easily enough. I’m assuming if memory serves that the dairy is the issue? So substitute rice, hemp, almond, or coconut milk for the milk and coconut oil for the butter. Milk is actually far easier to substitute for than other things. U just sometimes need to change up the cooking time. (Sorry I do so many substiutions I think it in my sleep anymore!)

    whoops! Just reread GAPS diet info. Suppose u could substitute raw honey for the succanat although amt wise would be trial and error.
