Well, I’m almost 28 weeks now…right at the end of the second trimester! Now I’m in a real race to the finish line, as the baby continues to grow rapidly, and I try to keep up with my freezer stash and other things on my to-do list.
In that vein, I’ve begun simplifying a lot of things in my life, and adding in a few other things. Yes, I know I didn’t post yesterday. It slipped my mind until late yesterday that I hadn’t done it, and spending time with my family was more important than getting the post done. They’ve always been my priority, but I haven’t acted like it until recently. I decided it was time to 100% put them first.
We’ve also been spending a lot of time playing lately. We met friends on Monday and Wednesday this week, which was really nice. We’re finally finding some real like-minded friends locally, which is awesome! We’ve all needed that for awhile. We’re spending more time out with friends or just playing outside, and less time inside (which means I’m at the computer a lot less). This has been really good for us.
I’m slowly working to fill my freezer now. I’ve recently made about 6 lbs. of butter and I have enough cream for another 6 – 8 lbs. I am planning to bread about 4 lbs. of chicken nuggets later today. Each week I’m getting a bit more and saving stuff as I can. I have 3 lbs. of strawberries put away, a few frozen bananas, and a bunch of rhubarb (still trying to figure out what to do with that…).
It’s interesting. This is my first pregnancy on traditional foods. When my son was about 6 months old, I lost a bunch of weight (on GAPS), then slowly gained it back on a WAP diet. I think my weight is kind of in “different places” now. I was looking at myself in the mirror the other day (now that I’m looking really pregnant) and realized I have the ‘perfect’ pregnant body now! Before I always kind of had fat hips and sides and I didn’t look that pregnant. I definitely would not want any pictures of myself pregnant because I just did not like my body. But this time I do. I think I look like an ‘ideal’ pregnant woman now! This is good.
I think I’m still measuring big — about 3 weeks ahead. Next week I’ll have a midwives’ appointment and we’ll see. That’s where I am this week!

You can freeze rhubarb. My mom always has. In my family we make and eat rhubarb pie often. We like that it tastes like a "more tart" apple pie. If you don't want to freeze it plain, you can always make a rhubarb pie (or a bunch of mini rhubarb pies in muffin tins) or rhubarb muffins/cakes etc for the freezer.
I would vote for the mini pies because they are cute and handy in a pinch.
lol Kate, you do look really good too:) it was so fun to see you the other day and i just cant wait to actually look pregnant and cute like that too:) i have always eaten WPF while pregnant, at least primarily, and i have always had that "cute pregnant" look that i love too:) looking forward to getting it back soon….:)
Rhubarb and apple together in a pie tastes great as well!
