This is a super refreshing, fun summer treat! I happened to have a bunch of strawberries around from our recent strawberry picking (we did another 30 lbs. over the weekend!) plus some limes. I love limes to marinate meat — there are lots of great recipes using lime in Against the Grain, including Spicy Lime-Marinated Beef Strips and Beef Jerky — and I had some left.
It sort of tastes like a virgin daquiri. I always used to love to drink those (virgin) strawberry daquiri mixes, but now I don’t buy them because of the HFCS and other junk in them. Now? I can enjoy again!
Ingredients:
- Juice of 2 limes
- 1 c. strawberries, mashed
- 1/4 – 1/2 c. raw honey, to taste
- 6 c. water
- 1 – 2 c. ice (optional)
Directions:
Mix the lime juice (fresh squeezed, about 1/4 to 1/3 c.), strawberries, and honey in a blender. Blend until smooth. Add water and ice, if desired. Crushing the ice in the blender will add to the daquiri-like effect, but it’s not necessary. Taste and adjust the honey as needed. Serves 4 – 8.
