Recipe Collection: Oven “Fried” Chicken

What can I say?  I like easy.  I like to cook fresh meals every night rather than relying on freezer cooking (it’s just not my style), but I don’t usually want to spend an hour working on dinner.  I have other things to be doing!

So what I look for are meals that take 10 – 20 minutes of prep time, followed by whatever length of cook time that does not involve me.  I don’t care if something needs to bake for an hour or sit in a pot on the stove (or the crock pot) all day.  That’s fine.  As long as I’m not expected to actively have to “do” anything.  These are great options for stay-at-home moms who are busy.  And some can be frozen too so that you can do the freezer cooking, if you prefer.  I believe this could be frozen easily enough.

This is a simple meal and one that I served alongside Bacon Scalloped Potatoes.  It probably took 30 minutes to put both together, and an hour ignoring both in the oven.

Ingredients:

  • 1 1/2 lbs. of chicken breast, thinly sliced
  • 1/2 tsp. onion powder
  • 1/4 tsp. paprika
  • 1/2 tsp. sea salt
  • 1/4 tsp. parsley
  • 1/2 c. bread crumbs (follow the link and make your own)
  • 4 tbsp. butter, melted

Directions:

If your chicken breasts aren’t already thin, then slice them thinly.  I have to do this.  Then, place them into a 9×13 baking dish.

Sprinkle them with all of the spices.

Top them with bread crumbs as evenly as you can.

Pour melted butter over them, as evenly as possible.

Bake at 350 for at least 45 minutes.  I usually let it go a bit longer if I’m baking something else with it.  Steam some broccoli to go with this and you’ve got an easy meal!
