A few years ago, I tried my first fermented beverage. It was a locally-brewed kombucha, made from tea from my dad’s company. I took a big drink and then spit it out. Turns out, I needed to acquire a taste for what is now one of my favorite beverages to make and drink. The same was true for wine and beer and, as it turns out, kvass.
About Kvass
I first read about beet kvass in Sally Fallon’s book, Nourishing Traditions. Here’s what she says:
This drink is valuable for its medicinal qualities and as a digestive aid. Beets are just loaded with nutrients. One 4-ounce glass, morning and night, is an excellent blood tonic, cleanses the liver and is a good treatment for kidney stones and other ailments.
Beet kvass is a lacto-fermented beverage that’s pretty simple to make. It’s a traditional Russian drink, full of beneficial probiotics. It’s definitely an acquired taste.

Types of Kvass and Thoughts
I was fortunate to try four different types of kvass from Zukay:
Super Green
I was quite skeptical because of the green color, but this one was definitely my favorite of the bunch. It has lemon and ginger in it, a combination I love, along with lots of veggies. My husband and I were sharing it over dinner and we both tentatively had a few sips and he declared he didn’t like it. Then, as we were cleaning up I looked over and he was polishing off the bottle.
Veggie Medley
I thought this one would be similar to Super Green, but it actually had a much different flavor. It included cucumbers, celery, kale, parsley, and cabbage and I actually really enjoyed the “pickle-y” flavor. I drank this while my husband was at work and didn’t save him any, so only one opinion here!
Kate’s comments: This is the first one we tried. My husband and daughter wouldn’t even touch it — no surprise there. My 3 YO declared he didn’t like it. My 1 YO begged for it! He called it “juice” and begged for more. I liked it although it wasn’t quite what I was expecting — I’m still used to ‘normal’ tomato-based vegetable juice. I found I was sort of craving it though, it made me feel good.
Super Root
I liked the tartness of this one a lot. My husband wasn’t a fan of the earthy flavors, so I got to have most of it to myself!
Beet
I love beets. I refused to eat them growing up, but they are one of my husband’s favorite vegetables so I started making them when we got married, and now we are both big beet supporters! To me, it tasted just like beet juice and was not as bitter as some of the other ones. However, for some reason, neither one of us enjoyed this one as much as I had hoped.
Summary
If you want to try some kvass before making it yourself, or you’re just not the DIY type, then I highly recommend Zukay Kvass. While our taste buds may differ, I suggest starting off with the traditional beet kvass, especially if you’re not used to drinking fermented beverages. This was the sweetest kvass of the bunch and my whole family liked it (the ones who would try it, that is).
