Super Duper Easy Sweet Tooth Fixins’

Our Top 5 Go-To Sweet Tooth Desserts.

When we first gave up refined white sugar and candy and candy bars and boxed cake mixes and cupcakes and pre-made icing and all those other “treats”, my husband went through serious withdrawals. I remember one night he stood in the refrigerator and pounded orange juice. I asked what he was doing. He said “I need something sweet so bad”. Haha!

That’s when my sister gave us our 1st Go-To Sweet Tooth Fixing Dessert: Peppermint Patties. They were delicious. And we had our first light bulb moment: You can actually enjoy the heck out of sweets and they can even be good for you :) . My husband has a major sweet tooth. It has been fun learning new recipes that satisfy a sweet tooth. And of course having healthy dessert alternatives for our children.

Here are our top 5 (current) go-to desserts. Mostly because they are super duper easy, fast, kid-approved, and beyond delicious.

#1: Peppermint Patties

The recipe originally came from Elena’s Pantry, but my sister traded out the agave nectar for maple syrup. This recipe only has 5 ingredients, and they are amazingly heavenly. Crunchy on the outside, smooth and creamy on the inside. The perfect mixture of peppermint and chocolate. You can find the full recipe and cooking directions (HERE)

INGREDIENTS:

  • ½ cup  coconut oil
  • ¼ cup  (1/2 maple syrup & 1/2 honey)
  • ½ teaspoon peppermint oil (I used organic)
  • ½ to 1 cup chocolate chips (or a bar of organic dark chocolate)

We were seriously stuck on these Peppermint Patties for months. Maybe even a year.

Then (like with most things) we got sick of peppermint patties and needed something new. We found that a nice high quality bar of 60% or higher organic dark chocolate helped hit the sweet tooth spot, so we kept many bars of organic dark chocolate in our pantry. That was our “go-to” sweet tooth fix. Then we stopped being boring. Here are our next favorites after our beloved Peppermint Patties.

#2: Raw Fudge

There are many variations to raw fudge. I personally like the recipe from Organic Authority, because it contains only 5 ingredients, and then you can add any additional ingredients: nuts, peanut butter, bananas, etc….

We have never used candy or ice trays as molds. Just put on parchment paper in the freezer. You can cut into squares or before you put in freezer, you can roll the parchment paper into a log, then put in freezer and then cut into circle size pieces.

INGREDIENTS:

  • 3/4 cup extra virgin organic coconut oil
  • 3/4 cup raw organic honey
  • 1/2 cup organic raw cocoa powder
  • -dash of sea salt
  • 1/2 of vanilla bean or 1/2 teaspoon of vanilla extract

#3: Macadamia Caramel Clusters

Another Elena’s Pantry Recipe. *We substitute agave nectar with honey for this recipe. Perfected by my sister’s 10 year old, haha. These were the biggest hit at Thanksgiving. We made them last weekend. They lasted about 1/2 a day. Another super duper easy recipe, consisting of 6 ingredients. And yes, they taste just like caramel. Recipe can be found (HERE).

INGREDIENTS:

  • ½ cup creamy roasted almond butter
  • ½ cup honey
  • 1 tablespoon vanilla extract
  • ½ tsp celtic sea salt
  • 1 cup macadamia nuts, toasted
  • 1 cup chocolate drops (or dark chocolate chips or a bar of dark chocolate)

#4: Triple Chocolate Brownies (Muffins)

Recipe comes from the Dashing Dish. Seriously delicious and made for chocolate lovers. Moist and melts in your mouth, with a nice crunchy topping. Our kids devour these. So do I, and I don’t really have a sweet tooth. A bit more ingredients, but makes a lot (perfect to bring to a class party or b-day party). INGREDIENTS:

  • 1 3/4 cup Oats
  • 3 Egg whites
  • 3/4 cup Unsweetened cocoa
  • 1/2 cup Unsweetened applesauce
  • 1 tsp Vanilla extract
  • 1/2 cup Plain Greek yogurt (or regular plain yogurt)
  • 1/2 tsp Cream of tartar (or 2 tsp. vinegar)
  • 1 1/2 tsp Baking powder
  • 1 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1 cup Hot water
  • 1/2 cup Baking stevia OR 1 cup sweetener of choice that measures like sugar (try sucanat)
  • 1/2 cup dark chocolate chips

#5: Vanilla Bavarian Cream with Blackberry Sauce (this is more of a gourmet dessert, but it’s amazing) The first time we made this, we could not believe how amazing it tasted. My sister requested it to be catered at her wedding, haha. And friends started requesting it for b-day presents. That’s how ridiculously good it is.

INGREDIENTS:

  • 1 TBS Gelatin
  • 1/2 cup Water
  • 4 egg yolks
  • 1/2 cup maple syrup
  • 1 TBS vanilla extract
  • 4 egg whites
  • pinch of sea salt
  • 2 cups heavy cream (preferably unpasteurized)

SAUCE:

  • 1 12-ounce package frozen blueberries
  • 1/2 cup maple syrup
  • 1-2 cups water
  • Fresh blackberries for garnish

Those are just our (current) top 5, of literally thousands of healthy alternative options for those nights when you have a sweet tooth (or if you are my husband, every night).

It has been so much fun learning that it is possible to enjoy sweets and not compromise your health or immune system. Eating healthy is not only beneficial, but it is also delicious!

The Myth of Vaccine Injury

I hear it everyday: “Vaccines Are Safe.”

In its most simplest terms, you will hear: “Vaccines are safe.”

In the most thought-out terms, you will hear: “The benefits outweigh the risks.”

Rarely will you hear (from mainstream media and our medical system): “Vaccines have not been proven safe. Vaccine Injury is real.”

October is Vaccine Injury Awareness Month

I think this is an important message to get across. Vaccines are not entirely safe. That is not a conspiracy statement. Or a statement to make others fearful. It is simply the truth. Parents need to be told that there are very real risks involved with vaccinating.

The problem is we don’t hear this. Whether we are sitting in our pediatricians office, reading a parenting magazine, or watching the TODAY show, all we hear is “vaccines are safe.”

Where are the stories of vaccine injury? The stories about the $2 billion paid out in vaccine injury cases? Why aren’t we told about these children?

“You cannot be in the presence of a profoundly vaccine damaged child and not know that child could be your own. And you cannot try to comfort a mother who has just buried a baby who has died from a vaccine … and not know that you could be the one standing over the grave. When it happens to your child, the risks are 100 percent.” ~Barbara Loe Fisher (Founder of the National Vaccine Information Center)

Just this week, I read an article saying: “There is a lot of research available showing that vaccinations don’t cause autism and are safe. There is no study that hasn’t been debunked that says otherwise.”

This article was widely discussed within the autism community, because they were outraged, and rightly so. There is actually NO research showing that the current vaccine schedule and combined doses given to infants and children is safe. And there is an abundance of science and research showing the vaccine-autism link. As well as many other autoimmune and neurological disorders being caused by vaccines. None of which have been debunked. In fact the studies that have “disproven” a vaccine/autism link, have been documented as having scientific flaws. You can read more about those (HERE)

We must seek truth.

Did you know the proper safety studies have never been done?

The chalkboard campaign portrays this truthful message in a creatively though-out out way by showing easy to read and understand chalkboards.

Vaccine injury is very real. What’s interesting to me is that the very industry that pushes vaccines, has (through creative marketing, surveillance systems, and lots & lots of money), created an illusion called “ the anti-vaccine movement.” Do they not realize that the “anti-vaccine” movement was created by nothing more than the very same parents who at one time, very much believed in vaccines and choose to trust in a system that promised to “protect” their children.

These are the parents that represent an entire generation of vaccine-injured children. But then those same parents chose to educate themselves and they read the research and the science and they figured out what happened to their children. And then those same parents also figured out that they could help and heal and recover their children. Thus the “anti-vaccine” movement was created.

This movement will only continue to grow, as more and more children are damaged by an ever increasing vaccine schedule. These parents are not  “anti-vaccine.” They are pro-their-child. And they will do everything they can to heal their child, while at the same time trying to educate the world about the cause of their child’s injury and share the message that vaccine injury is preventable.

I am very privileged to be involved in some pretty powerful groups, where these amazing & educated parents spend their days discussing how to heal their children from vaccine injury.

However, it breaks my heart that not only are these children injured by our medical system, they are also not believed, threatened, bullied, and mocked.  The biomedical community is huge and growing by the numbers. It’s only a matter on time when the world will have to admit that they exist. That the children are real. That their injury was really caused by vaccines. And that their injury was also reversible.

I watch organizations like Autism Speaks spend millions of dollars on genetic research, all the while , an entire generation of autism families are shouting from the rooftops: WE KNOW THE CAUSE. WE ALSO KNOW HOW TO PREVENT IT.

I remember the day I found out about “The Gardasil Girls.” It’s a website set up by the parents of thousands of girls who have been injured or killed by the Gardasil vaccine. This was a vaccine that was fast tracked to market, brilliantly marketed, never properly tested for safety, and has remained on the market despite killing and injuring thousands of girls. It has already been taken off the market in many other countries, but not in the United States. It is currently pushed on every young girl starting at the age of 9 years old, for a cervical cancer that the vaccine has no way of protecting against. A train wreck of one vaccine injury case after another. Never discussed in mainstream media. And still pushed on young girls by every well-meaning doctor.

I spend my days talking to parents of vaccine injured children. There is not a day that goes by that I don’t receive a message or phone call about another child who was injured by vaccines. Autism, SIDS, Asthma, Allergies, Diabetes, Ulcerative Colitis, Autoimmune Disorders, Neurological disorders, Seizure disorders, Behavioral Disorders. Vaccinated kids with whooping cough, croup, RSV. Constant ear infections, rounds and rounds of antibiotics, tubes, pneumonia, sinus infections, upper respiratory infections, strep infections, constipation, bloody stools, chronic diarrhea, the list goes on & on.

I wrote a post recently titled: Is This The Best We Can Offer? You can read the full post (HERE).  In this article I share how for the first time in U.S. history, children’s life expectancies may be shorter than their parents. Despite the rapidly growing vaccination schedule, American children are more chronically ill and disabled than ever.

The following quotes come from Chapter 12 “Pediatrics: Sick is the New Healthy”, from the book “Vaccine Epidemic:”

“Children in the United States today have much higher rates of asthma, autism, diabetes, Crohn’s disease, epilepsy, life-threatening food allergies, obesity, ADHD, learning and behavioral disorders, and suicide than kids did in the 1980’s, when fewer vaccines were given”.

The current CDC Recommended Schedule gives 70 doses of 16 vaccines by age 18.

“What if it were true that the way we now vaccinate children causes more death, chronic disease, and disability than it prevents in America?”

I think it’s time that we start paying more attention to vaccine injury stories. Unfortunately, they are only growing in number. I’m doing a series on my  blog called “Lioness Arising Mothers“, where I shared personal stories written by mothers of vaccine-injured children. Their stories are heart wrenching and awe inspiring. I encourage you to read their stories.

No Shots, No School, Not True

It’s that time of year again. Back to School. And with that comes Back To School Shots.

It was hard for me to read all the posts on Facebook leading up to back-to-school shots.

“Just brought Sally in for her Kindergarten shots. I don’t know who cried more, me or her”

“School shots today. Not looking forward to this”

I would think to myself, “Why did you do it then?”

No Shots, No School is simply Not True.

If you don’t feel comfortable giving your child shots to enter school, you don’t have to. It’s that simple.

The decisions we make for our children should be one of peace. Not decisions that cause agony.

One of the most tragic things I hear a parent tell me is: “I didn’t want to give my child shots, but we had to so they could go to school” NO! This is simply not true.

As parents, we still own our instincts and our choice. No-one can take that from us. At least for now. Some states are in major crisis. More on that later.

We are part of a system that has done a very good job making people believe the lie that shots are mandatory for school. When we hear information regarding school vaccinations, all parents hear is that unless their child gets his shots, he will not be allowed to go to school. This is NOT true.

EXEMPTIONS

In the book, Vaccination is NOT Immunization, written by Dr. O’Shea he shares:

Mandated means that there are laws about something.

Mandatory means you have to do something or other. Two entirely different concepts. Vaccines are mandated, but they are not mandatory, as school officials like to pretend.

There are exemptions from vaccination, in every state. Mississippi & West Virginia are the only states that don’t allow Religious and only allow Medical exemptions.

1. All states have a medical exemption.

2. All states allow a religious exemption to vaccination except California, Mississippi and West Virginia.

3. Philosophical exemption.  The following 17 states allow exemption to vaccination based on philosophical, personal or conscientiously held beliefs: Arizona, Arkansas, California, Colorado, Idaho, Louisiana, Maine, Michigan, Minnesota, North Dakota, Ohio, Oklahoma, Texas, Utah, Vermont, Washington and Wisconsin.

Proof of Immunity
Some states will allow exemptions to vaccination for certain diseases if proof of immunity can be shown to exist. Immunity can be proven if you or your child have had the natural disease or have been vaccinated. You have to check your state laws to determine which vaccines in your state can be exempted if proof of immunity is demonstrated.

Private medical laboratories can take blood (a titer test) and analyze it to measure the level of antibodies, for example, to measles or pertussis that are present in the blood. If the antibody level is high enough, according to accepted standards, you have obtained proof of immunity and may be able to use this for an exemption to vaccination.

Every school is required by law to provide exemption forms. But they don’t.  You must know about your state’s exemption form before you go in.

I overheard a conversation at my children’s school during registration this year.

School Official: “You are not going to be able to register your child for Kindergarten today until his shot record is up-to-date.”

Momma: “I’m not going to be able to get him caught up on his shots before school starts.”

School Official: “I’m sorry, you won’t be able to register for school.”

Me: “That’s actually not true. Your child can register for school today. You just need to fill out the exemption form.”

Momma: “I don’t necessarily need an exemption form. My husband lost his job and we don’t have insurance so we can’t afford to get him caught up on his shots.”

School Official: “Sorry, you won’t be able to register for school today”

Not only was what that mother told a lie, but my question is, how has this lie perpetuated so far and so deep that even school officials don’t know any better? And why are children being DENIED an education for a “law” that doesn’t really exist? In my state and at that school, all the mother had to do was sign the exemption form. She was not told the truth. There is something very wrong about that.

EVERY STATE IS DIFFERENT

I know in my state, a parent can write their own exemption or simply sign the exemption form provided by the school.

Sample Statement of Exemption:

Under State of ____ Revised Statutes 17:170 Sec E, I hereby claim exemption from the immunization requirement for Philosophical/Personal reasons. 

(Statement of dissent for philosophical/personal reasons.)

I understand that in the event of an outbreak of a vaccine-preventable disease at the location of the educational institution or facility the student attends, the administrators of the educational institution or facility, upon the recommendation of the office of public health, may exclude the student from attendance until the incubation period has expired or I present evidence of immunization.

In my particular state, it’s that easy!

Unfortunately, it is not that easy in every state.

In fact, this “law” is only getting worse. Right now in West Virginia, there is a very tragic story taking place with a 5 year old girl named Ryleigh. She is being denied her education because she was told she could not come back to school because she needed a DTaP booster shot. She’s already received all 4 of her boosters shots, she just received the 4th dose too early (over 3 years early) and they are telling the mother she needs another booster because she got the 4th dose too early. Sounds too crazy to be true right? It is complete insanity what is happening. You can read more of her story (HERE).

I’ve been speaking with (and hope to help work with) the founder of Mississippi Parents For Vaccine Rights. Their hopes & needs are simple. In their own words: “Mississippi parents do not have the legal right to select, delay, or opt-out of vaccines unless they homeschool. There are 48 states that DO allow that right. We want to be the 49th”.

As a parent, I will end with their mission statement, which I think we can all relate to:

“We are a group of loving parents who are pushing for the right to make vaccine decisions for our own children without losing their right to an education. We are not “anti-vaccine”; we are “pro informed consent” and “pro parental rights” to choose what medical procedures our children undergo and when. Some of us have children who are fully vaccinated, others choose selective and/or delay vaccinations, while others have declined all vaccinations for their children. ALL of our decisions have been made in the best interest of our children. We support the right of parents to choose their child’s medical care, without being forced or coerced into accepting vaccinations in order to attend day care or public or private schools.”

How to Ensure A Successful Year of Packing Healthy School Lunches

I have to first admit something. I am not the school lunch maker in our home. That is my husband’s job. I’m not sure if it’s a job I subconsciously put on him (since my dad was the lunch maker in our home growing up), or if it’s something he enjoys doing. I think a little bit of both.

This year we have four kids in school. The older two kids go 5 days a week and the younger two kids go to school 2 days a week. There is a lot of lunch making going on in our home. Hubby makes the school lunches before he leaves for work in the mornings. He leaves very early, so this is all done before any of us wake up.

We are both working parents, so our motto is “Keep It Simple,” without ever compromising our priority to feed our children healthy nutritious meals. I know a lot of parents feel like they don’t have the time to pack healthy school lunches every day, so hopefully this post can encourage you to give it a try. And stick with it. A healthy home packed school lunch is the absolute best way to give your children proper nutrition during the school year. Cafeteria food cannot compare.

I sat my hubby down to ask him for his tips on ensuring a successful year of packing school lunches.

  1. Keep it simple. I often see pictures of home packed school lunches on different websites, and they are very fancy & look very involved. If I thought I had to pack school lunches that looked like that, I too would feel like I didn’t have time. My husband says: “Kids are simple.” They just want a healthy lunch that consists of the stuff they know and like to eat. Healthy does not have to mean complicated.
  2. Pack stuff you know the kids are going to eat.  Trying new foods or ideas on your kids in a packed school lunch is not the best idea. Stick with what they know. A lot of times if we are introducing a new food that is not typically in their lunch we will tell the kids. Mid-way through last school year, we started making a lot of hardboiled eggs. The kids loved them, so we started packing them in their lunches. First though, we tried it at home and then let the kids know that we were going to start putting them in their lunch. That way they know what to expect.
  3. Choose items that don’t require tons of preparation. You can still give your children healthy foods without involving a lot of prep work. Take fruit: If you do not feel like you have time to cut up fresh fruit (mangos, pineapples, kiwis, etc..) then get fruit that only involves rinsing. We love to do blueberries, raspberries, & grapes as our easy-fruit options for school lunches.
  4. Make sure you have what you need. My husband has a white board on the fridge where he will jot down different food items that we are running low on. That way we know to get them before we run out. The worst is going to make 4 sandwiches in the morning, only to realize you only have enough bread to make 3 sandwiches.
  5. Personalize it. My dad started this fun tradition and I love that it has been passed down to my kids. My dad used to decorate our brown paper bags by writing our names in very creative ways or with drawings or notes or Bible verses. (Remember brown paper bags back in the day?). My husband puts a sweet note or picture inside the kids’ lunch boxes. It only takes seconds to write “I love you” on a piece of paper and slip it in with the lunch. Kids love this. Last year, we got a note home from my daughter’s teacher. It said that she found our daughter crying during lunch and when she asked why, our daughter told her: “They are happy tears. My daddy wrote me the sweetest note today.” This simple gesture not only touched our daughter, but touched our daughter’s teacher as well.

I read somewhere: “Think outside the sandwich.” I think this is a good saying when thinking of packing a school lunch. I recently did a post titled Healthy School Snacks, where I listed our Top 10 favorite healthy school snacks. All very easy to prepare and typically found in our children’s lunch boxes. I also feel that these Healthy Snack suggestions, can also be combined to make a very nutritious lunch. Pita & humus, with a hardboiled egg, yogurt, nuts, & fresh fruit are all great snacks, but together also serve as an excellent lunch.  You can find some additional ideas for healthy lunches here.

Our priority is always making sure the school lunch consists of nutritious living foods. Many children’s snack & food items today consist of nutritionally void, overly processed, dead foods. With a little extra effort, we can offer our children so much more!

Packing school lunches requires my husband to wake up earlier. It also requires diligent planning and multiple trips to the grocery store. But my husband says the satisfaction of knowing the children are eating a healthy nutritious lunch at school is well worth it.

Real Food Confessions: Chick-Fil-A

I’ve lived under this false sense of truth for quite some time. My children have never eaten McDonald’s, Burger King, Taco Bell, Wendy’s and whatever other fast food is popular (I honestly don’t even know).  They have honestly never even had a bite of food from these fast food chains.

But we did eat Chick-fil-A. And we loved it. The whole family loved it. All 6 of us. And we could eat for under $25.00. And it was easy and convenient, especially on those long summer days. We were probably eating it about once a month. Maybe twice.

And then I read an article on the 100 Days of Real Food website, called “Food Babe Investigates: Why  Chick-fil-A” 

Oh no. It confirmed all my worst fears (which I already kinda knew, but chose not to believe). I read the ingredient list. Yuck, yuck, yuck. There are 100 ingredients in the Chick-fil-A sandwhich alone. 18 of them are preservatives.

How can I honestly say we don’t eat food with preservatives, if I’m feeding my kids chicken sandwiches that are stocked full of preservatives? And food coloring, and refined grains, MSG, GMO corn. No, no, no. Stop. I didn’t want to read anymore.

The Food Babe had some really great articles going into the details of Chick-fil-A ingredients: ”Chick-Fil-A or Chemical-Fil-A”?

“For example, let’s take TBHQ which stands for “Tertiary Butylhydroquinone” – an ingredient that is listed twice, once in the chicken and once in the bun. TBHQ is a chemical made from butane (a very toxic gas) and can only be used at a rate of 0.02 percent of the total oil in a product. Why is there a limit to this? Maybe because eating only 1 gram of this toxic preservative has been shown to cause all sorts of issues, from ADHD in children, to asthma, allergies and dermatitis to dizziness and even has caused stomach cancer in laboratory animals. Limiting TBHQ to a certain percentage, is the same logic the FDA made when allowing a product to still contain 0.5 grams of transfat and be labeled “transfat free.” If you are consuming processed foods, eating at fast food restaurants or chains that use processed foods you are consuming an overload of preservatives and other chemicals. The high dosage is a huge factor contributing to increased auto immune disorders, rising health care and cancer in America”

It wasn’t the easiest thing to give up. I felt like it was my last easy go-to-food-choice for those long hard days when you couldn’t possibly think about cooking.

But I’ve always said, “When you know better. You do better.”

I cannot consciously feed my young children food that will harm their bodies. I believe everything we put into our bodies gives us life or gives us death. I choose life for me & my children.

I will continue to learn and grow and change and give things up. There is a price we pay for convenience. The convenience of Chick-fil-A is not worth our health. So bye-bye Chick-fil-A.

It’s been about 2 months now. I honestly don’t even miss it, now that I’ve properly researched the ingredients. We still haven’t told the kids yet that we won’t be eating in anymore. Haha! We will wait until they ask for it, and surprisingly they haven’t asked for it yet. Which makes me wonder, how much of what we feed our children are things they don’t even want or ask for?

Oh and the good news, here’s the Homemade organic version of the Chick-fil-A sandwhich that you can make at home. And from what I hear, it tastes very close to the real thing. Pretty cool huh?
